Tasty Strawberry Ideas & Recipes!
Dip whole, rinsed strawberries into melted semi-sweet chocolate, then place on waxed paper and chill until chocolate hardens.
Add crushed strawberries to fresh lemonade or limeade.
Make a refreshing strawberry cooler by combining equal amounts of sliced strawberries, yogurt and milk in a blender. Sweeten with honey to taste.
For a quick breakfast, top toasted frozen pancakes or waffles with sliced strawberries and your favorite syrup.
Stir finely chopped strawberries into softened cream cheese and spread on bagels or toast.
Make strawberry butter by beating together 1/2 cup pureed strawberries, 1 Tbsp. honey and 1/2 cup butter or margarine. Spread on toast, muffins, pancakes, rolls, broiled chicken or fish.
Add the beautiful color and taste of strawberries to your cake decorations.
Recipes
Strawberry Bread
Yield: 2 loaves
Temp:350
Bake time: 50 to 60 minutes
3 cups flour
3 cups mashed strawberries
2 cups sugar
1 tsp. baking soda
1-1/4 cups oil
1 tsp. cinnamon
4 well beaten eggs
Drain 1/2 cup strawberry juice from mashed strawberries and reserve for topping. Mix all dry ingredients together. Make a hole in center of mixture. Add strawberries and remaining juice, oil and eggs. Mix by hand until thoroughly combined. Pour into 2 greased 9 x 5-inch loaf pans. Bake until tooth pick, inserted in center of loaf comes out clean. Cool thoroughly on a wire rack.
Topping
8 oz. cream cheese, softened
1/2 cup reserved strawberry juice
Mix together reserved strawberry juice and softened cream cheese. Blend until smooth. Drizzle over top of bread.
Elegant Strawberry Pie
1 baked 9-inch pie shell, cooled
1 cup sugar
3 Tbsp. cornstarch or Clear gel
1 quart strawberries washed and caps removed (divided)
1 - 8 oz. package cream cheese, softened
Whipped cream (optional)
Mix together sugar and cornstarch. Slice half of the berries and cook them with the sugar and cornstarch, stirring constantly until mixture is clear and thickened. Cool. Spread the softened cream cheese in the bottom of the cooled pie shell. Top with remaining whole berries. Pour cooled berry glaze over top. Refrigerate for at least 3 to 4 hours until set. Best if made one day before serving. Serve with whipped cream if desired.
Frozen Strawberry Pie
1- 9 inch graham cracker crust
2- 8 oz. containers of strawberry yogurt
1- 8 oz. container non-dairy whipped topplng
1 cup fresh strawberries, mashed (sugared to taste)
6 - 8 whole strawberries for garnish
In a large bowl fold yogurt into whipped topping. Stir in mashed berries. Pour into pie crust. Freeze till firm. Garnish with fresh whole strawberries before serving.
Strawberry Pizza
Preheat oven to 325 degrees.
Crust:
1cup flour
1/2 cup 10x sugar (powdered confectioners)
1/2 cup cold butter or margarine
Combine crust ingredients mix with pastry blender or cut with knives as you would pie crust.
Pat crust mixture onto a 12” pizza or a 9x13 pan.
Bake 12 - 15 minutes or until edge is golden brown. Cool.
Filling:
1-8 oz. cream cheese (softened)
1/2 cup sugar
1/2 tsp. lemon juice
Cream filling ingredients until well blended. Spread mixture over cooled crust to within 1/2” of edge.
Arrange whole or halved strawberries over filling mixture.
Glaze topping:
1/2 cup water
1/4 cup sugar
1 Tbsp. cornstarch
1 - 2.75 oz. Strawberry Jell-O
Stir water, sugar and cornstarch together in a small sauce pan.
Bring to a boil until clear, remove from heat.
Add Jell-O stir until well blended.
Spoon warm glaze over fruit being careful to cover all parts of the strawberries.
*Hint a pastry brush works well.
Chill 2 hours or overnight (more than 24 hrs. the crust will become soggy).
Garnish with whipped cream just before serving if desired.
